Blueberry Lemon Poppyseed Muffins✨

Made these gluten-free muffins the other night and they were sooo good!


Details:
🤍 juice + zest of 1 large lemon
🤍 1/3 c milk of choice
🤍 1 1/4 + 1-2 tbsp oat flour
🤍 2/3 c almond flour
🤍 2 tsp baking powder
🤍 2 pinches of salt
🤍 1/2 c plant yog (or normal if you’re not plant based/vegan)
🤍 2/3 c maple syrup
🤍 1 mashed ripe banana
🤍 2 tbsp oil (used melted coconut oil)
🤍 1 tsp vanilla extract
🤍 2 tbsp poppyseeds (optional)
🤍 1 c blueberries

Combine lemon juice + milk to create buttermilk and set aside. In a bowl combine everything except the 2 tbsp of oat flour, bloobs and poppyseeds. Don’t overmix!
Combine bloobs with the remaining flour and fold in w/ poppyseeds.
Bake at 350 F/ 175 C for 25 mins or until a toothpick comes out clean!
