Chicken Tortilla Soup made from leftovers for lunch!
Last night I made chicken taco salad from from chicken thighs I threw in the croc pot with basically scraps from my fridge and turned the drippings into left over soup. With everything going on I’m trying to make sure I don’t have a bunch of kitchen waste and it’s really having me stretch my mind and I love it.
For the thighs I used for the salad I used:
5 boneless skinless chicken thighs
1 taco seasoning packet
1/2 large jar of salsa
1/2 can of diced green chilies
I cooked on high for 4 hours. Removed most of the chicken and let it rest before shredding for my salad.
For the soup:
Drippings and some reserved chicken meat from the crockpot
4 chicken bullion cubes
4 c water
1/2 tsp ground smoked chipotle pepper chili powder
1 t smoked paprika
1 t cumin
1tsp table salt
Mix well and simmer in crockpot for 1 hr.
I added some cojita cheese and cilantro I had left over from last weeks taco night.
