Cooking during quarantine, what can I do to help people during this difficult time? I’ll try to post recipe that are cheap and can be done with staple ingredients. –
Pasta with broccoli is a very inexpensive but delicious pasta dish.
For 2 servings
~broccoli florets or cauliflower or purple sprouting broccoli
~4 anchovies or miso paste
~extra virgin olive oil
Place some water to boil and in the meanwhile wash the broccoli under running water.
When the water is boiling add salt (please salt your pasta water generously otherwise will be unedible ❌) then the broccoli and the pasta in the same pot.
In a frying pan drizzle some olive oil, garlic, chilli and anchovies or miso paste, let it cook for couple of minutes and turn off the heat.
Drain your pasta al dente and add it to the frying pan with the garlic and olive, let it infuse for 2 minutes constantly stirring. Add some pasta water if the pasta seems too dry!
Serve with cheese if you like or you can toast some breadcrumbs with a little bit of oil to add on top if you don’t have or don’t want cheese.
