
Day #5 of the national #lockdown and I decided to make my famous Roast Chicken and Potatoes, one of my hubby’s all time favorites ππ₯ππ₯ππ₯ππ₯ππ₯ππ₯ππ₯ππ₯π .

INGREDIENTS …………………………………………………………
ROAST CHICKEN:
β’1kg chicken pieces
β’5ml garlic
β’10ml BBQ/chicken spice
β’5ml paprika
β’15ml lemon juice
β’15ml white wine (optional)
β’15ml soya sauce
β’15ml worcestershire sauce
β’15ml mixed herbs (basil, oregano, rosemary, sage)
β’Salt and pepper to taste .

METHOD

1. Mix all the chicken marinade ingredients together and rub onto chicken pieces.
2. Marinade for about 1 hour
3. Cover in tin foil for the first 45 minutes then uncover for another 45 minutes till nice and brown.

ROAST POTATOES:
I usually make 1-1,5 potatoes per person depending on the size of the potatoes as they shrink
β’60ml oil
β’15ml mixed herbs
β’5ml garlic salt
β’5ml paprika
β’4ml Chilli flakes (optional)
METHOD
……………………………………………………………………….
1. Chop the potatoes as desired, mix into oil in prepared dish.
2. Sprinkle herbs and spices on potatoes and bake at 190Β°c for about 3 hours till gold and crispy, turning the potatoes regularly.
