3/4 cup flour
2 tbsp melted butter and pour in milk (whole is recommended but I used almond milk) until you get a thin batter consistency. Whip it all to get air bubbles out, these are meant to be flat.
Heat skillet with butter and ladle batter in. Cool for 1 minute and flip for 45 seconds. Makes 6 or so.
In same skillet, heat butter and sauté spinach. Set aside. Whisk together 2 eggs with pepper and pour into skillet. Top with sautéed spinach, torn prosciutto and shredded cheese. Slide on top of crepe and fold.
Serve with hot sauce (we like to used truffle hot sauce 🙄). #pandemicpantry #coronavirus #stayhome #breakfast #recipes #staysafe
