During the quarantine I decided to try out a recipe for three ingredient peanut butter cookies. Peanut butter, sugar, an egg. That’s it. I was super skeptical, expecting it to be a weird textured mess, but whoa were they good. I thought about adding chocolate chips, but then thought they could use a little crunch too. Since I might have panic purchased several bags of @traderjoes dark chocolate covered pretzels, I figured I try them out in my new favorite cookie. Holy. Moly. Y’all. They are SO good! My recipe calls for creaming the peanut butter and sugar together, but if you’re in a hurry you can absolutely just dump it all in a stand mixer and call it good. Your cookies might be not quite as light, but honestly a little density with these guys is just as good. Either way, you end up with a crazy delicious batch of cookies that are going to disappear reallllly quickly. If you want a little added texture even with the pretzels, use half raw turbinado sugar and half regular granulated sugar. It just gives the cookie a little extra personality. The options are endless, so just play around and experiment. What else do you have to do?
