I made a batch of ground beef vindaloo – a rich indian dish with fresh ginger, vindaloo curry, and green peas – with roasted cauliflower and potatoes, stuffed it inside pizza crust or tortillas, and sprinkled it with fresh cilantro then topped it with a tangy sauce I made with mango, jalapenos, cilantro, and apple cider vinegar. ✔
The vindaloo stuffed pizza crust was a hardy and filling dinner, the vindaloo tacos were the perfect afternoon pick-me-up for this working from home while schooling from home mom. The boys loved them too! I have a little bit of beef left and i think I’ll use it to make lettuce cups for tomorrows lunch. That makes 3 meals from 1 effort. BOOM!
