What is your favourite breakfast/brunch food order? I’m a BIG eggs bene guy but I love me some huervo rancheros when I decide to shake things up a little. *
Today’s brunch is brought to you by fridge leftovers that needed to be used so I decided to bring one of my favourite Mexican brunch staples to life at home, and you can too! *
Here’s what I used and how I put it together:
-To make the tomato sauce mixture I put a small can of diced tomatoes in a saucepan. I added in fresh garlic, oregano, basil, onion powder, chilli flakes, and s+p. I had leftover corn in the fridge as well so I tossed that in to use it up. Covered it and let it simmer until the liquid reduced slightly and it thickened up
-Then I laid a folded up large tortilla in an oven safe frying pan (or you can use a baking dish)
-Topped the tortilla with leftover kidney beans that were sautéed in taco seasoning + leftover @missinglinksausage chicken sausage
-Sprinkled on shredded cheddar cheese
-Poured the tomato sauce mixture over top
-Dug out a little hole in the sauce and cracked an egg into it
-Put the frying pan directly into the oven and baked at 400 degrees for about 15 mins, until the egg was cooked. I like my egg yolk runny on my rancherossss but you could totally bake longer for a firm, well done yolk
Once I removed it from the oven I garnished it with:
-Dried cilantro
-Sriracha -Half an avocado
-Fresh basil
