I do love a banana bread! Problem is that it doesn’t last very long! 😜
I always make banana bread with naturally gluten free grains, legumes, nuts and seed flours that pack a punch nutritionally and if you have a high speed blender, it’s so quick and easy to make your own.
Use gluten free oats to make oat flour, lentils to make lentil flour, almonds to make almond meal, flax seeds to make flax meal and quinoa to make quinoa flour.
Quinoa contains all of the essential aminos acids which many plant sources of proteins do not so combined with your favourite clean protein powder, you can easily increase your daily protein intake.

Blend some quinoa to make your own quinoa flour or you can buy your own.
(You can replace with any flour here but quinoa is high in protein for this version)
Mix the dry Ingredients together, combine with the wet.
Bake for 40 – 50 mins at 175 degrees C / 350 F
(Depending on how sweet your protein powder is, you can leave out or add the coconut sugar)

3 bananas mashed
3 tbsp ground flax seed
80ml almond milk or any plant milk
80mls coconut oil melted
3 tbsp maple syrup
3 tsp vanilla extract
50g gluten free rolled oats
2 tbsp coconut sugar
1 tsp baking soda
1/2 tsp baking powder
210v oat flour (oats blended in blender)
2/3 tsp sea salt
Couple squares dark chocolate like green and blacks chopped
Mix dry ingredients and then wet separately as before, combine and bake for 40-50 mins at 175 C / 350 F. 👉NUTTY VEGAN BANANA BREAD
3 ripe medium bananas, mashed
½ cup almond milk, plain, unsweetened
¼ cup coconut oil, melted
2 tablespoon chia seeds
1 teaspoon vanilla extract
¼ cup coconut sugar
1 1/4 cups almond meal
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
Pinch salt (optional)
2 tablespoons sunflower seeds
2 tablespoons shredded coconut
2 tablespoons sliced almonds
6 tablespoon chopped walnuts
Combine dry with wet ingredients.
Bake for 40-50 mins at 175 F / 350 C
