I still may be trying to figure out which day it is, but I’ll always know when it’s #tacotuesday! #ad These Spicy* Beef Empanadas using #beef are simple, delicious and a great way to get your kids involved! They can help roll out + cut + seal the empanada dough! .

This recipe can make 10-20 empanadas, depending on how many you’d like to make. I made 10 — using the leftover taco meat for salads, omelets, or regular tacos! Make once, eat all week! They can also be frozen and reheated in the air fryer (which is what we like to do) .

Empanada dough: in a food processor, pulse together 3 cups of flour + 1/2 tsp salt + 10 tbsp butter (or ghee) until crumbly. Add 1 egg and 1/4 cup of cold water. Pulse until a dough ball forms. Divide the dough into 2 and wrap with plastic wrap – put it in the fridge for 30min to an hr.

For the spicy beef mixture: cook 1 lb of #kybeef with 1/2 small onion, diced + diced jalapeño* (I used 1/4 of one, seeds removed) + 1 1/2 tbsp taco seasoning. Allow to cool before filling empanadas.

Take 1 section of dough and roll it out until thin. Cut it with a large cookie cutter and roll out each piece until desired size is reached. Fill each empanada with 1 tbsp or so of filling. Fold over and pinch/fold shut. Once they are filled, allow to chill in the fridge while the oven preheats to 375°. When they’re ready to bake, brush a beaten egg over each one before baking for 25-30 minutes (or until golden brown). Enjoy! .
