Lebanese Green Almonds. I’d never gotten green almonds until yesterday. They sat on my counter all day as I was figuring out what to do with them. Eat them raw? Why not. But I’d had two cups of coffee and needed to make something. So, I poached them. Yes. Poached. In olive oil (and 🧄 + 🍊 juice + thyme). The result is a pillowy tender, perfect fat-acid marriage that pairs well with sea salt, orange zest, and chopped thyme.
