Mission accomplished! I made my 2 carnivorous brothers a vegan dinner! First time cooking with whole wheat couscous and it turns out delicious!

Those cherry tomatoes are so sweet and fresh by itself, so why left then out!

The dish has:
•Roasted kale and chickpeas with salt, pepper cumin seeds and paprika, combined with olive oil. At 325°F for 10-15 min.
•Couscous, I added salt to the water (follow the cooking instructions from the box). Will take about ~15 minutes.
•Cherry tomatoes cut in 3 parts or half.
•Diced onions and celery and chopped parsley.

Dressing:
• Be generous with extra virgen olive oil then add salt, pepper, chili flakes and lime juice. In a largo bowl, mix everything together.

*Feta cheese can be added, but I think blue cheese or gorgonzola will do great as well. How about sour cream 🤔🤔??*.
