oatmeal breakfast cups—
makes 12
☼ 2.5 c rolled oats
☼ 2 bananas, mashed
☼ 1/2 tsp salt
☼ 1 tbs honey
☼ 1 c + 2 tsp water
☼ 2 tbs coconut oil, melted
☼ 1 tsp vanilla extract
☼ 1 tsp cinnamon
☼ optional add ins: chocolate chips, walnuts, chia seeds, flax/hemp blend, almond butter, coconut flakes, dried fruit… really whatever you like!

🌿begin by preheating your oven to 380° and lining your muffin tin. in a medium sized bowl, mix together all of your dry ingredients. in a separate bowl, mix together your wet ingredients (including the mashed banana). slowly combine the wet ingredients with the dry + add in whatever extras you chose! fill each cup about half way and bake for 21 minutes. best right out of the oven with a cold glass of almond milk🥛

for this recipe I chose to split the batter into four so that I could try a few different add ins while baking just one batch! some are plain, some have almond butter + chocolate chips, some have walnuts, and some have chia seeds… needless to say they were all amazing😋
