PUMPKIN, SWEET POTATO QUINOA SALAD
INGREDIENTS: 3 servings

For the salad:

1 kg acorn squash (or any kind of pumpkin), peeled and cut into cubes
2 medium sweet potatoes, peeled and cut into cubes
1 bunch asparagus, washed and trimed
1/2 cup quinoa
1 big avocado, peeled and cut into cubes
1/2 cup blackberries, or pomegranate seeds
1/2 cup blueberries
1/4 cup roasted pumpkin seed
Olive oil
Salt and pepper
For the dressing:

3 to 4 tablespoons lemon juice
3 to 4 tablespoons olive oil
Salt and pepper
INSTRUCTIONS:

1. Preheat the oven to 175°C.
2. Season squash or pumpkin, potatoes, asparagus with salt and pepper, then drizzle with olive oil. Transfer each to separate baking sheets.
3. Bake for about 40 minutes or until done.
4. Meanwhile, rinse and drain quinoa. Transfer into a small saucepan, add 1 cup water, 1/3 teaspoon salt and 1 teaspoon olive oil. Bring to a boil, over medium heat, let it simmer, uncovered for about 15 minutes. Cover and let it rest for 5 minutes. Let it cool. Fluff with a fork before serving.
5. Cut asparagus into medium pieces.
6. In a large bowl, combine salad ingredients
7. Add dressing ingredients to the salad, season with salt and pepper and toss to coat evenly.
8. Serve it cold or at room temperature.
