QUICK and EASY breakfast, I literally made it in about 5 minutes before rushing to work this morning 😅
🥬 Spinach Mozzarella Omelette 🥬 (I know the emoji is not actually spinach)
🍳 3 eggs
🍳 handful of spinach (about 2/3 cup)
🍳 4 tbsp of mozzarella cubes
🍳 seasoning (I use an Italian blend of spices)
🍳 cooking oil
1) Crack eggs in bowl, add seasoning + cheese cubes & scramble.
2) Heat pan to high heat. Splash enough oil just to cover surface of pan. Let it pre-heat.
3) Rinse spinach. Squeeze spinach to really dry out all the water. Add to egg mixture & scramble.
4) Pour egg scramble into pan. Lower to medium heat. Cook as you would cook an omelette.
5) Remove from pan & enjoy!
