Quick and easy guac! Perfect for snacking or adding an extra element to your meal 🥑😛 I am overrun with ripe avocados – having bought too many at the last farmer’s market before lockdown. I will really miss my weekly visit to my local market and I feel for all the vendors who now have nowhere to sell their lovely produce.
Ripe avocados calls for one thing only, Guacamole. It’s not just a dip to have with corn chips, it’s also delicious on toast for breakfast or in a lunchtime sandwich or serve a dollop with grilled fish or lamb.
To stop the guacamole going brown, leave one of the avocado stones in it and cover it well with a bee’s wrap or baking paper, pressing it right down on the surface. This is my version which I have been making for years. The quantity is easily halved if you don’t have 4 avocados and if you don’t have fresh coriander use ground coriander seed and some fresh chopped parsley for colour.
