Salsa Pulled Chicken – Perfect for tacos, salads & more! Here’s what you need: two boneless chicken breasts, 1 cup chicken broth, 1/2 cup of salsa, 1/2 onion (diced), 1 Tb olive oil, 1/4 tsp each of salt, pepper, dried oregano; 1/2 tsp dried cilantro; 1/2 Tb each of chili powder, cumin, garlic powder.
Take onion and sauté on medium heat for 5 minutes until translucent. Add chicken, broth, salsa and seasoning, mix and cover, allowing it to come to a bubble. Once it starts boiling, adjust heat to low-medium and let it be for 60 minutes.
