While I’m temporarily closed for business at the moment, I’ve decided to bake a few treats and share the recipes with you all so you can try them out at home! This one has proven very popular over on my Facebook page so here it is for #instaworld – Just a few ingredients and egg free, these are delicious, with or without the chocolate chunks! You can leave them out, or add in literally any chocolate you might have in the house. So easy to bake too! Here’s the recipe if you fancy giving them a go…. Ingredients:

150g butter, at room temperature
60g caster sugar, plus a little extra for dusting
250g plain flour
Optional – 75g chocolate chips/chunks/smashed up chocolate bars

Preheat oven to 180C/Fan 160C/Gas 4.

Beat butter and sugar either by hand or by using an electric mixer.

Add the flour and combine using a spoon. Add the chocolate pieces if using.
Finish combining using your hands and form a dough.
Take cookie sized portions of dough, flatten on a lightly floured surface using your hand so they are no more than 2cm thick. If you have a cookie cutter, use that to cut the shortbread cookies to shape. If you don’t have a cutter, you can make rustic style shortbread cookies just by forming the dough into shapes with your hands.
When you’ve used all the dough, line a baking sheet with baking paper. Transfer the shortbread cookies to the baking sheet.

Bake in the centre of a pre-heated oven for 10-12 minutes. You don’t want the shortbread cookies to look brown when you take them out of the oven.

The shortbread cookies will firm up as they cool down, so don’t panic if they’re a bit squishy when you take them out of them oven!
Sprinkle with some caster sugar while they are still hot and leave the shortbread cookies to cool on the baking sheet.

Store in an airtight container if they last long enough!

Makes about 8 cookies.
