Taco Tuesday! Chorizo Potato tacos.
Seriously, I just love making tacos. It allows for creativity. It allows me to eat with my hands (no forks required). It allows me to use whatever I have on hand which at this time in history is happening a lot.
The filling is basically my soy chorizo breakfast potatoes but some of the vegetables are different because of what we had left. Recipe is below.
5 med/small potatoes cubed & peeled
Airfryer those using the French fry setting.
10-15 sliced black olives
3 chopped garlic cloves
1/2 plum tomato
1/4 small yellow onion
1/3 Soy Chorizo (Trader’s Joe)
Sautee over medium heat until it’s hot enough to eat.
Combine potatoes & the sauteed.
Throw in a tortilla (please don’t throw good food)
Whatever is in the fridge at this time.
Some ideas: poblano peppers, avocado, hot sauce, cilantro, lettuce, a creamy sauce
