The prep is so quick and easy, with so few ingredients. I have made a few mistakes which I’ll tell you about!
Season chicken thighs, salt, black pepper, pul biber flakes, oregano, olive oil, grated garlic ( which I missed out in this step)
Leave to marinate in fridge for at least 2 hours.
In a hot pan seal the chicken thighs for about 3 mins each side.
Take chicken out onto plate. ( I didn’t but please do!) Sauté some red / white onions, garlic in the same pan. (will taste better, don’t just add to pan like me!)You can add peppers, mushrooms, whatever you like at this point.
Add chicken thighs back in.
Water down some tomato paste add a pinch of salt( I added a pinch too much at this point!) pepper, splash of olive oil. ( I grated garlic at this point as I had forgotten above🥴) Pour over chicken.
Cook with lid shut for 30 mins, turn once or twice and baste, add a splash more hot water if needed.
Open lid and cook for another 10 mins on low heat.
